Caribbean: Mexico

Caribbean | Mexico Monumental Mayan ruins rising out of the jungle. Mariachi bands busking in city plazas. Swish beachfront mega resorts, where spas, sports and sun-seeking are the order of the day. TYPICAL LOCAL DISHES

Tacos are crisp, fried tortillas, stuffed with either chicken or beef, and topped with grated cheese, guacamole, cream or sauce. Fajitas are composed of sliced, fried meat, onions and peppers all rolled inside a taco. Chorizo is a spicy Mexican sausage. Guacamole is well known around the world, but you'll find nothing to beat the original Mexican version of mashed avocado, tomato, garlic and lime juice. Huevos rancheros make a substantial breakfast. Fried eggs are smothered in tomato sauce and chopped chilli, and served on a tortilla. Bizcochos are cakes and biscuits, which make a good breakfast snack. Seafood is abundant along the coast, and is usually served grilled (a la plancha) or with garlic (al mojo de ajo). Menus might offer lobster, mussels, clams, prawns or red snapper. Beware of sopa de camaron (prawn soup), which is very spicy! Exotic fruits include papaya, watermelon, prickly pear, naseberry and custard apples. Flan or creme caramel is on nearly every menu for pudding.

DRINKS OF THE REGION

Tequila is a Mexican tradition, and is only made in the town of Tequila. It is served as a short with lime and salt, or in cocktails such as tequila sunrise and margarita. Beers include both lagers (cerveza rubia) and dark beers (cerveza oscura). Some of the best brands are Corona, Negra Modelo and XX Dos Equis. Kahlua is a coffee liqueur flavoured with vanilla. Fruit juices are delicious, but it's best to order juices made from fruits that have to be peeled.
